Bioavailability of and Interactions Among Trace Elements
نویسنده
چکیده
With the advent of present-day tools and techniques of analysis, it is possible and practical to measure accurately the essential trace element content of human foods. Although this is a major step forward in assessing nutrient needs and status, an important unknown remains. To meet nutritional requirements it is important to know not only the quantity consumed but the proportion of that consumed which is absorbed and utilized. A major thrust of modern nutrition research is concerned with the absorption and utilization of nutrients in foods. The term bioavailability has been applied to this concept. Although bioavailability applies to and is an important consideration for all nutrients, it is particularly pertinent for the trace elements because so many factors affect their absorption and assimilation. Bioavailability of a specific trace element is affected by intrinsic factors such as the physiological status of the animal or person that consumes it. There are numerous intrinsic factors that significantly affect bioavailability (1), but this chapter is concerned with the extrinsic or dietary factors of importance in the bioavailability of those elements that are of prime concern in human nutrition. Extrinsic factors that affect bioavailability may be divided into major and minor dietary components. Furthermore, each of these components may be classed as an essential or nonessential nutrient. The minor components tend to interact more specifically with the essential nutrients. The purpose of this review is to describe interactions which determine bioavailability of iron, zinc, copper, and selenium. The reader is also referred to other reviews and symposia (1-6) related to the subject.

Levels of Fine Particulate Matter Bound Trace Metals in Air of Glass Industrial Area; Firozabad
The present study deals with sequential extraction of fine particulate matter (PM2.5) bound trace metals in an industrial area of Firozabad, India. During the study period, daily PM2.5 concentration ranged between 73.49 μg/m3 and 113.26 μg/m3 with poor air quality index of 196.37. In the present study, Ca recorded the highest while Co had the lowest concentration among all analysed metals. Mn, ...

Pityriasis Alba is an eruptive skin disorder which occurs as dry hypopigmented , scaly patches appears mainly in sun expose areas of skin, usually in children and young adolescents. Complete cure occurs within few years even without treatment. Few trace elements play essential roles as cofactors in pigmentary process of the skin. In this study by determination of zinc and copper levels in...
متن کاملBiomonitoring of trace metal bioavailability in the barnacle Amphibalanus improvisus along the Iranian coast of the Caspian Sea
The fouling barnacle Amphibalanus improvisus is a cosmopolitan biomonitor of trace metal bioavailability in coastal waters of reduced salinity such as estuaries or the Baltic Sea. Bioavailability of Ag, As, Cd, Co, Cr, Cu, Fe, Mn, Ni, Pb, V and Zn to A. improvisus was investigated in July 2014 at 15 sites along the Iranian coast of the understudied, yet biologically unique, Caspian Sea. In gene...
متن کاملA continuous in vitro method for estimation of the bioavailability of minerals and trace elements in foods: application to breads varying in phytic acid content.
A continuous in vitro method for the estimation of the bioavailability of minerals and trace elements is presented. This in vitro method is believed to be more representative of in vivo physiological conditions than in vitro methods based on equilibrium dialysis, because dialysable components are continuously removed from the pancreatic digestion mixture. The continuous in vitro method is compa...
